Beaten rice (chiura) stir-fried with potato, peas, and spices — a quick, comforting Nepali breakfast or snack ready in under 20 minutes.
🧂 Ingredients(serves 2)
- ·2 cups Chiura (beaten/flattened rice)Rinse briefly and drain to slightly soften
- ·1 medium Potato, finely diced
- ·½ cup Frozen peas
- ·1 small Onion, finely sliced
- ·1, sliced Green chilli
- ·¼ tsp Turmeric
- ·½ tsp Cumin seeds
- ·½ tsp Mustard seeds
- ·2 tbsp Mustard oil
- ·to garnish Fresh coriander
- ·to taste Salt

💡 Tips
- •Don't over-soak the chiura — a brief rinse is all it needs. Soaked chiura turns mushy when fried.
- •Chiura (beaten rice) is available in thick and thin varieties — both work but thick holds up better when stir-fried.
- •Add a fried egg on top for a more substantial breakfast.

Rinse chiura under cold water for a few seconds in a colander. Shake dry and set aside — it should be just slightly damp, not soggy.

Heat mustard oil in a wok or large pan. Add mustard seeds and cumin seeds and let them pop.

Add onion and chilli. Stir-fry on medium-high heat until onion is translucent.

Add potato and turmeric. Stir well and cook until potato is cooked through, about 8 minutes.

Add peas and cook 2 minutes.

Add chiura and season with salt. Toss everything together quickly over high heat for 2–3 minutes.
