💡 Tips

  • Don't over-soak the chiura — a brief rinse is all it needs. Soaked chiura turns mushy when fried.
  • Chiura (beaten rice) is available in thick and thin varieties — both work but thick holds up better when stir-fried.
  • Add a fried egg on top for a more substantial breakfast.

👨‍🍳 Method

  1. 1

Rinse chiura under cold water for a few seconds in a colander. Shake dry and set aside — it should be just slightly damp, not soggy.

  2. 2

Heat mustard oil in a wok or large pan. Add mustard seeds and cumin seeds and let them pop.

  3. 3

Add onion and chilli. Stir-fry on medium-high heat until onion is translucent.

  4. 4

Add potato and turmeric. Stir well and cook until potato is cooked through, about 8 minutes.

  5. 5

Add peas and cook 2 minutes.

  6. 6

Add chiura and season with salt. Toss everything together quickly over high heat for 2–3 minutes.

  7. 7

Garnish with fresh coriander and serve hot.
